I was only able to start drinking again recently.

Any of you guys experience seizures? Earlier this week I experienced a seizure and tremors like I've never had before. The only thing that helped me was drinking slowly throughout the day to constantly quell them. Next day I felt pretty normal, and only had ~3 drinks.

So how often do you guys get really serious alcohol withdrawals? Bad enough that you think you've finally done fucked it up?

twas two or three years ago that the 1.75L of my dear old grandad got discontinued. I miss him. every weekend it was the same, my boss would ask, " can you work?" and i would say "i cannot, i have to visit my old grandad." my earnest face and polite demeonor led them to believe that i cared enough about people to have extracurricular activitites outside of work . . . family obligations. that was never the case. grandads is cheap. grandads is strong. i did need my weekly visit to grandad, but granddad was just a bottle. i miss you papa of papas. as kentucky straight goes you were the best.

Anyone here a functional alcoholic? By alcoholic I mean drinking more often than not, regardless if it's beer or alcohol.

Anybody? Share your stories, etc. I drink Miller more often than not, while I'm not alcoholic I feel like I drink more than I should.

Woke up having withdrawals today. I'm sure I had em yesterday too, but hey I just cracked a beer and suddenly I felt all better and forgot about it. My hands are still shaking.

I wouldn't say I function though, but I didn't function before I started drinking either, so I don't really blame it all on the drink. Still, I have to quit. It'll kill me.

I get drunk pretty much every night and manage to show up at work 99% of the time. Actually, I feel like drinking's pretty much how I stay functional. It helps me sleep at night and wake up in the morning. It helps me relax in social situations. I love booze hihi.

Yeah i would say that is a fair assumption to make. Its not an absolute guarantee. From what i usually experience cider ferments pretty well without any additives so 15% is not unreasonable especially considering theres fermentable sugar already in the juice. But i would say at least 12-14% assuming your yeast tolerates it and it should using champagne yeast.

with Lalvin EC-1118, which is a champagne yeast, I find it pretty easy to get up to around 17-18%. If you start getting more complicated with your brewing and start doing things like staggered nutrient additions and you follow a regular degassing regimen you can push it to around 22%

at least thats the highest i've ever managed.

Get yourself a hydrometer. They're like 25 bucks and theyre an absolute necessity if you really wanna get into brewing. They help you determine the sugar content of your juice and they usually have a little scale on them that will give you an ABV% estimation for a given specific gravity (density)

it'll take the guesswork out of figuring out how much sugar is enough to get the desired alcohol content. also keep in mind that too much sugar will create a toxic environment for the yeast and your fermentation might not start at all.

Oh and make sure your juice doesn't have preservatives in it. The best cider i've ever made came from fresh, cold pressed apple juice. I get it free for helping out a buddy of mine who runs an apple orchard.

So I made a peach white wine with added sugar and champagne yeast, and it turned out really well. Tastes like a moscato, and strong for a wine. It was a satisfying feeling getting a good buzz from something I made myself.
I'm capping the cider tonight. It's going to sit and age while I work though the wine.
I've also got a second bottle of cider that I started a week after the first one, so I can have a gallon a week. Hopefully I can keep a brew overlap so I'm never without booze.
Bought an auto-siphon so I can avoid stirring up settlement in future batches. I'll order a hydrometer next.
