Do you have any food knowledge that you've seen other people not be aware of?
Maybe we could make a thread of fun facts?

For example:
When you look at a lot of "Italian" cooking in America, you'll often run into stuff like tomato sauce loaded with garlic and a million herbs or just sauce-heavy recipes in general. But actual European Italian sauces are generally more light and simple. There's an actual taste of tomato that's not bogged down by too much garlic or onion and a lot of people in the USA would actually potentially not really like a lot of Italian pizzas because they don't toss a whole bucket of sauce and cheese on top of their pies.
I pointed this out because my friend was talking about how Italian his sauce was after he filled it with like 10 different things like garlic/onion/oregano/basil/rosemary(??) etc

I was always aware that some fats are good for you, but I never really bothered looking into it. So I guess it's not a terrible thing that peanut butter is one of my big weaknesses. Also makes me glad to know that salmon is generally a pretty big component to my diet.

How about a thread on dining out/take out? Peeves, thoughts, tipping, etc.

The Denny's by my house has been killing it. Always gets my order right and quick even during a rush. Remarkable for a Denny's.

As for a peeve, nothing I hate more than pushy service. I almost always tip well but insisting on selling me three drinks or getting passive aggressive when I don't order dessert or an appetizer is the best way to cost the server some of that sweet, sweet tip.

I eat rather "healthy" most of the time. Salads, vegetarian alternatives to meat (still eating meat once or twice a week), mostly selfmade food, selfmade burgers and Pizza etc...
Since 1 and a half months I am addicted to the Chilli CHeese-Burger from our local BK.

I can't stop! Seriously!
I waste nearly 10- 20 bucks a week for 8-10 burgers!
I wake up in the morning and the first thing is thinking about Chilli Cheese Burgers!

I buy them on my way to work and when I come home I already stuffung myself with them for Dinner.

Are they full with some drugs? Addictive stuff?
Why can't I stop?!

If I wouldn't make sport like swimming and running, I would look like a huge Marshmallow-man.

Thread reminds me, I went to Burger King last night. I got the Bacon King, which is essentially a double whopper with TONS of bacon on it. I eat it sans bun, but that is a different story.

Anywho, I saw the chili cheese dog on the menu, so I was like fuck it 'give me a chili cheese dog also'. It was so fucking gross. I know, I shouldn't be surprised, but god damn. The picture showed melted nacho cheese over chili but the actual dog had shredded cheese that was stuck in the plaster known as 'chili'.

The bacon king was bomb as fuck though.

Oh I agree. I can cook really well, but Friday and Saturday are usually the nights I'll get something instead of cooking. Sunday I cook larger, and the weekdays I make something each night.

The Bacon King is one of my weekend foods, and like I said I just wanted to try the dog because it looked good on the picture and it was cheap.

I try to go fast casual when I can, like places that actually make decent food without the wait service/obligatory booze purchase and tip. not super common around my parts but getting better.

cooking at home is totally where it's at though, I miss it. the exception is stuff like naan bread, which I cannot produce the way a 1000f tandoor will.

also your cooking style is similar to mine. I make six serving stews during the week which are portioned and kept for lunches, fridays/saturday I get something like takeout, and sunday I make pizza, starting the dough in the am and baking an extra one for monday lunch. mainly because dough is ready when it's ready, unless you really monitor temperature you can dial it in, but I prefer just to chill and make it when it's ready

Hey everyone. I've been vegetarian for years, and vegan since February. Last night I had a dream I was in a buffet eating eggs .. and I've been hungry all day despite eating plenty of food and snacks. Should I go get a burger or some eggs behind my girlfriend's back tomorrow? I can't help but live in Portland and feel awful about myself by eating dairy. Not trolling btw, just don't know what I should eat to feel better, or at least kinda full.

There's a side of shame to it at this point. We live together, she's the reason I became a strict vegetarian, however I had tried before that when I lived with my parents.

She didn't make me be vegan actually. She did it herself, and I decided to a few months later. I definitely believe in it, but yeah I'm like OCD and have strange spiritual beliefs. I should probably eat eggs if I'm dreaming about them.

A sad and recent video about the meat industry reinforced my beliefs recently, but fuck.... I just sobered up recently after doing a ton of pills, and I'm learning to pay attention to my body and brain, and something feels a little off. So maybe I will experiment with a burger ........... or just eggs and cheese. Last time I had pizza though, I got mild diarrhea.

industrial agriculture is hardly better. it just appears that way because plants don't have feelings. there is nothing wrong with eating meat. there is everything wrong with centralized food production. everything about a city is built on suffering and destruction in the interest of convenience. also, stop taking pills

if you do introduce meat again, stay the fuck away from nitrites/trates/sulphites/phates. that is what makes your digestion fucked up, I guarantee it. no cured meats, no deli meats, no cheap beer or cheap wine or cheap whisky. in fact you should hardly drink at all.

It isn't good, but it's no where near on the same level.

We have 1.4 billion cows and 1 billion sheep and pigs being used for livestock. Feeding and maintaining that sort of population of animals alone is resource exhausting. With the water and food we use for livestock alone, we could probably end world hunger.

And really, we could have sustainable agriculture if we wanted to.

But yeah, everything in moderation.

OP here. My life's been bland lately so I'm giving in to fast food, getting a veggie burger with cheese. Chickened out on actual meat. Moderation for sure. Also, I did stop taking pills, even weed/alcohol/caffeine. Being an addict and vegan was extremely hypocritical of me. Like, trying to be healthy but... eating pills every day, yeah... learning more about balance and also loving myself and not hating myself for eating cheese, or even meat one day if my body needs it or if I fucking want to. I think as long as we are conscious of our actions and moving in the "right" direction then we'll all be alright.

ok so I figured out the deal with carbs. basically as long as I'm active I can eat them. and before/during a workout is pretty much required. an internet I read said 2g per lb of bodyweight per day, which sounds crazy (514 calories of rice, for instance). maybe not that crazy when I see that number, but anyway I can eat chips for breakfast and pastries with lunch but dinner it is no es bueno
hopefully I can tame the stoner beast and not eat all the carbs when I hit the vape on occasion

man, thats just all wrong. Creating an entire category and calling it "carbs" is wrong - "chips" is not the same as...say...a baked potato, or brown rice, pastry and bread is not the same as potato and other carohydrate rich vegetables. The entire system you are using for measuring "carbs" is redundant. I wish you could see how silly youre being and how unnecessary it is to create divisions like this, rather than to just eat a good balance of food which isnt nonsense.

Yeah but fibre lessens the impact of the insulin spike so there is different effect from the same quantity of the same carbs. Processed shit has less fibre and is broken down quickly and creates a bigger spike. Broadly speaking it's about how processed they are.

food wishes had a savory pastry of some kind where he used anchovy or some other canned fish oil as a glue or something similar in the pastry. I don't remember it well but I think the lesson is to use things like fish oil/anchovy oil as a strong aromatic umami thing. I will keep it in mind. probably would be good in marinades, stews, etc. might not be a good flavor to blend though, might be better as a specific stronger component like the post you linked

but I can see it really opening up in a pastry. I know classic cesar salad has anchovy flavor as well.

a loaf like this should be done with the muffin method. mix wet, mix dry, mix together as briefly as possible to minimize gluten production. a loose sloppy dough is gud

but this could have been something else, also the bottom of the pan probably got really hot so it may have just cooked off a bit. the rise looks good so that's the real takeaway

Made some vegan meatloaf or what I call Neatloaf, sometimes just 'loaf'.

It uses faux beef and sausage, but they're basically the same except for the spices-- TVP and soy.

So that mixed with minced onion, tapioca starch, nutritional yeast, grape seed oil, rolled oats, some spices and ketchup.

It isn't meat so you shouldn't expect it to take like meat, which is why I prefer made up names to "vegan meat thing" or the even more unappealing "fake meat thing"

It tastes great, the only tricky part is texture. Pack It in tight and bake at a slightly higher temp than recommended. M oven runs hot and it still wasn't enough, but I was in a hurry so it is what it is.

I think next time I'll make a spicy glaze instead of using ketchup. Also garlic. Everything needs garlic

Definitely garlic. You also need some earthy flavor like Worcestershire sauce or mushrooms or smoked paprika or soy sauce. Or most of those. That will get you a meatier flavor

I've been avoiding carbs for the past 6 months or so and it's going pretty well, I've lost a lot of weight and I don't really miss eating breads/potatoes/rice/beans/etc. anymore, but the one annoyance is finding something to drink that doesn't have sugar in it. I hate artificial sweeteners; I've tried saccharin and stevia and both of them have a sickly aftertaste that I can't stand, so sugar-free variants of bottled tea/juice that I like are out of the question. All I really drink now is water, unsweetened black coffee, and a few glasses of straight vodka in the evening (I'm still an unrepentant alcoholic). What the fuck do people drink on low-carb diets? And are there any artificial sweeteners that don't taste awful?

FYI /nom/, the transition into ketosis is often painful shit (one of the reasons it's recommended that you pursue it under the care of a doctor). Don't make the decision likely.

I still think that either Alexis is over simplifying it or something is missing.

You obviously can still burn fat without a low carb diet and there's only so much your body can reduce it's energy consumption by. Fat is basically a high density energy store and if it was too hard to use we wouldn't bother storing it surely? You cannot negate thermodynamics.

However if I assume what he means is "Your body will fight burning fat" so will burn as little as it has to stay alive and ketosis does that most efficiently then I could believe it. Every body does vary but I think losing fat while eating some carbs is a pretty common thing most people experience at some point during their life.

It's the implication that you cannot burn fat with a keto diet that jars with me.
