I've gotten the Impossible Whopper a couple times since BK has a deal where you get the real one with the fake one for $7. Tastes just like the real one to me, but otherwise I wouldn't pay a premium for it since it still has just as much saturated fat and sodium as the real one so it's by no means healthier.

Anyways, I think they stick around. They taste good enough that people with dietary restrictions, either for actual health reasons or made-up reasons, will enjoy them because they don't taste like shit, and they taste good enough that they can trick dumb people into paying for them thinking that they're eating healthier.

It kind of feels like traditional gasoline/petro cars vs electric cars thing where the old guard has such a massive market share that it will never go away, and it will only cede however much to the opposition as they see fit, and with the new Impossible style of plant-based "meat" (and to a lesser extent the Beyond stuff which doesn't taste as good) you already have companies tits-deep in the beef and poultry industries partnering up with Impossible and Beyond to make even more money.

Soy is a miracle crop. It restores soil health by fixing nitrogen. That's why the US grows so much. They grow corn for a couple seasons, then they grow soy to restore the soil. There's a lot of fucked up shit about US farming, but fuck the haters that don't like corn/soy. The soy bean has so many delicious and nutritious uses.

Tofu has tons of nutrition, and is a nice protein to base a meal around. It's good in soups, good sauteed, good deep fried, good raw, good blanched, etc. Each technique has a bit of a learning curve, so people try it once and say tofu sucks. It's not a meat substitute, it's something else entirely. You're not gonna grill tofu like a steak. But it has its own unique flavor and properties. Also, it works great when cooked with meats (like mapo tofu).

Fermented soybean is the best, though. Soy sauces? Amazing. All the different chinese/korean/japanese fermented soy pastes? Life changing once you learn about them. Fermented tofu? pretty good. I've never had tempeh, but really want to.

Soy bean oil? Can't complain. It's nice and neutral, and has a high smoking point. Nutritious or healthy? Not really.

Soy milk? Love it. how can you not? Nice, nutty, light flavor.

Way different texture and flavor. Tofu is squishy and soft, good in things like peanut sauce.

Tempeh is more dense from the fermentation and has a meaty quality. So you can bbq and put in a sandwich or put it in a wrap and it's just as good, if not better, than meat would be.

I'd probably also prefer tempeh to pork, something about the taste I just don't care for.
It'll never compare to some nice lamb roast though, that stuff is mouth heroin.
I could grok somebody having the same distaste for all meat instead of just pork.
(still, gotta have tried some of that lamb before dissing all meat, can't generalize it all together)
