this meal is just fabulous. few things to consider:

protien : eggs, sausage, etc
carbs: potato, bread, beans, corn
vege/fruits: salad, stirfry, carrot sticks, etc

variety and proper balance of the top three gives u good results

It's this stuff. I'm not a huge fan of carniceria chorizo tbh. It's always bland and too lean.
I love longoniza but havent picked any up.
I know this shit is cheap and too oily you have to drain it and end up with like 20% your original amount.
I like it though.

Also yeah I was hung over and needed something to make me sweat. Love a halved jalapeno or serrano with lime juice and salt. seriously one of my favorite things.

Oh yeah for sure man, peppers like that are honestly one of the best condiments. Another good way to do it is to use an open flame or torch to blister the skin then lightly oil and salt it. It's an absolute necessity for a plate of chicken and molé. I made a big pot of tamales and some molé this last weekend and it's one of things you're always grateful for down the road.

A nice thing about chorizo I discovered,
they completely change into another texture if you first give them a quick fry, then you actually steam boil them, then after they're thouroughly cooked, you fry them to your liking in color. Keeps them properly cooked and chewy, while still getting that char without burning them too bad.

I dunno what he's taking about but I just cook mine in a large sauté pan until it starts to brown and the fat renders. After that I brunoise a medium onion and caramelize it with the chorizo in the pan. I ground some pork sirloin this week and made fresh chorizo with it and upped the fat level with some schmaltz I rescued from work.
