I had some sliced on pizza, tasted almost like truffle oil. Good shit.

Wrap each bulb in clingfilm then tin foil, put them in the dehydrator at 60F for fucking ages (4-8 weeks). I did 6 because I was getting bored of waiting and it seems pretty well done. Uses less energy if you do loads at once so they retain the heat better and the dehydrator doesn't have to keep putting lots out.

Dehydrators aren't cheap but they're good for so many things, they're worth the investment imo

Eat them. a bulb a day as snacks. I ate my stash of black garlic recently. I don't make my own though.

It's literally a two-step process. Wrap them up, put them in the dehydrator and wait. It's ... not complex.

I mashed some up in soy sauce, mustard, Maggi seasoning, Sichuan pepper and hot sauce then added it to some fried normal garlic and king prawns, are it with fries. Was good.
