Fair criticism. I do love bacon gravy though so could leave out the bacon chunks in the gravy and add bacon fat into the sausage gravy with sausage chunks. Could also crumble crispy bacon over the top so it doesn't soak into the gravy so much, but bacon on the side works just as well. I just want the biscuits and gravy to have elements of both sausage and bacon.

heres one way to put it

  • most of what we define as "flavour" are smell molecules in the air. most of what we taste is actually being smelled in the back of the mouth via the nasal cavity. Aromatic compounds impart flavours like "citrus" "vegetal" "herby" "smokey" and so on

  • the tongue picks up core aspects/ qualities of food = salty, sweet, sour, bitter etc

  • the tongue and mouth also form an impression of "texture"

these 3 things are combined in order to give the eating experience.
