honestly? because cannabis tastes fucking bitter. that's why 99% of edibles you see are people trying to cover weed up with shitloads of sugar and strong flavors like chocolate/coffee/banana.

with that said i did crust a bigass steak with weed once before grilling it and it was dank. didn't get that high, but enjoyed the meat. frankly i'm surprised that savory weed doesn't get more attention, since it fits better with the natural taste of the plant. but space brownies are a meme so everyone makes brownies that taste bad and acts like it's a great idea.
